Scott, here is one I have used.
Whole Wheat Buttermilk Biscuits
2 Cups Whole Wheat Flour (I used 1 3/4 cups WW flour and 1/4 cup unprocessed wheat bran from Hodgson Mill)
2 Tablespoons Baking Powder
1 teaspoon Salt
2 teaspoons sugar
125 grams Butter, cold (1 stick + 1 Tbsp
3/4 cup Buttermilk
Preheat oven to 450°F.
In a medium-sized mixing bowl combine the flour, baking powder, salt, and sugar. Then, add the butter in chunks. Mash in the butter using a pastry cutter until pea-sized granules are formed. Add the buttermilk and mix until it begins to come together and continue with your hands until the dough no longer sticks to your fingers. Flour your counter top and plop the dough down onto it. Fold the dough and knead just until the dough is fully combined and stays together. Then, roll or pat out the dough until it’s about 1-2 inches thick (the thicker the higher the biscuits will rise, but the less biscuits it will make).
Place on a baking sheet and bake for 12-15 minutes.
