1 cup of:

Sugar = 7 oz
Flour, lightly spooned and swept= 4.5 oz
Flour, scooped and swept= 5 oz
Cornmeal = 5 oz

The butter conversion is a dead giveaway that it's not right. 1 pound of butter is 4 sticks, or 2 cups, so 1 1/4 lbs should come out to 5 sticks, or 2 1/2 cups.

Since the conversion of weight to volume is not perfect, I usually round the converted weight to the nearest standard volume measurement. For example, if the conversion is 2.27876 cups, I'd round to to 2 1/4 cups.

Here's what I came out with, which is very different from yours:

1 lb all-purpose flour = 5 1/3 cups or 4 3/4 cups, depending on method of measuring
1 lb butter = 2 1/2 cups
1 lb granulated sugar = 2 1/4 cups
4 oz egg yolks = 7 egg yolks
oz yeast = 2 packets or 4 1/2 teaspoons
lemon zest, grated
1 oz almonds - 1/4 cup
⅞ lb cornmeal = 2 3/4 cups

But I agree with Pat - get a scale! I love, love, love mine, and it's small enough to fit in a drawer :)
