Can I make icing ahead of time? If so, what is best way to store and for how long? (cookie kit idea)

I'm trying to break everything down into small steps (painful swollen feet from fall down go boom long ago still haunts me). So this is both for me as well as...
Thinking I might make sugar cookies to ice, and send the icing/sprinkles to the grand nephews as an "art project" for them. My niece got hit suddenly with bell's palsy and right now can't even walk. So thought this might be something to keep the kids busy with some holiday spirit tossed in.
So wondering if I could make the cutout cookies, put icing in tubs, and mail the "kit" with sprinkles for the kids to assemble.
