One of my favorites is to slip a little unrefined coconut oil into melted chocolate for coatings. I love the chocolate and coconut flavor. Also a bit in frostings to give a bit of that flavor to chocolate cakes. It's also very good to use as the oil in a thai coconut rice where you want the flavor of coconut with the chiles, cilantro, etc.
