When I make fried rice I am generally using leftover rice, I saute whatever veggies, add the rice and cook most of the liquid out. Then I add the meat and seasonings. Then I add the raw eggs and stir-fry them into the rice to finish it.

If I was purpose-cooking the rice I would use a medium grain rice and use about 1/4 less water.
