My friend Cristina Potters is a former NYC chef, now giving food tours in Mexico. I was on the hunt for a braised pork dish and she swears by this one, says I'll forgo anything else. I'm making it later this week, and parking the recipe here for future reference and in case anyone here wants in on the action!
