I made a double batch of these teacakes, shipping off 2 dozen to my adopted Mum in New York for her birthday, and packed the rest in a tin to take with us next week to the lake cottage (leaving Thursday for the weekend).

So I have the tin in the basement where it is cool. I'm wondering if I should refrigerate or freeze to keep them fresher for next week. Thoughts?

Bakewells are sinfully delicious teacakes of Mary Berry's favorite: Layers ("The Lairrrrrrrrs!!!) of flaky pastry, no soggy bottoms, homemade cherry jam, almond frangipane, vanilla icing, and a cherry on top. I made them quite small (pecan tassie-minimuffin sized).

I will be packing Proper Tea, Devonshire Cream, homemade Cherry Jam, Scones (baking those the night before we leave), and finger sandwich ingredients. As god is my witness, I will have a proper afternoon tea while gazing at the lake.
